Sloppy Joes

Sloppy Joes - Susie Whitney Vairin's recipe
10 minutes on the stove top

1 lb. Hamburger
1/4 t Onion salt
1/4 t Garlic salt (optional)
1/4 c Ketsup

Cook hamburger, until crumbly , add spices, add ketsup until fully covered, but not excessively runny. Serve on hamberger buns.

Easy Chicken Pot Pie

Easy Chicken Pot Pie from Kristin Maki
1 ½ hours on cook top and oven

1 Package Ready made pie dough
1 Rotisserie chicken (de-bone, skin, and cut into bite sized chunks)
1 can Cheese soup
1 jar Chicken gravy
1 pkg. Frozen mixed vegetables (small bag)
2 Potatoes (par boiled until tender in salt water)

Line at least 2” deep 9” x 6” greased baking dish with one pie shell. Mix rest of the ingredients. Put in shell. Cover with other pie shell, seal edges... and bake to instructions on pie shell box.

After 20 minutes wrap the edges (so they don't burn) with foil continue baking.

Fajitas

I found this recipe when I combined two recipes
20 minutes or less on stove top

2 Chicken breast (boned, skinned, and cut in stirpes and cut into 2” lengths
1 Med. Onion (cut into narrow wedges loosen)
½ Green pepper (cut into narrow wedges)
½ Red pepper (cut into narrow wedges)
½ Yellow pepper (cut into narrow wedges)
¼ Bottle World Harbors Fajita sauce

Cook the chicken breasts until white, add vegs, stir pour over sauce and stir. Cover with lid and cook for five minutes. Peppers should still have color.

Serve on two flour tortillas with fresh chopped, avocado or guacamole dip, tomatoes, onions, grated cheese (I like Colby cheese), and salsa.

Lasagna

About 2 hours on stove top and oven. Heat oven 350 degrees
I usually make multiple pans and freeze it unbaked… pull out and bake about ½ hour longer than below

2 lb. Hamburger (I like it meaty)
2 - 12 oz. cans Tomato paste
2 cans Water (tomato paste cans)
6 cloves Garlic (chopped fine) or 1 t garlic salt
1 large Onion (chopped fine) or 1 t onion salt
(½ t Salt if not using onion and garlic salt)
1 t Oregano
2 c Fresh Mushrooms

1 box Lasagna noodles cooked
2 lb. container Cottage cheese (or ricotta cheese)
2 lb. Mozzarella cheese sliced as thin as possible

I am not sure about these amounts… I think that they accurate. I guess I need to make this...

Fry hamburger (break into as little pieces as possible), add spices and mushrooms, stir and cook for a few minutes, add tomato paste and water stir. (If you like add a fresh tomatoes or a can of diced tomatoes). Turn down heat and let simmer for 10 to 20 minutes. (longer is better)

Cook lasagna covered with salted water until just soft. I drain and fill pan with cold water and leave them in the water so noodles are easy to handle and don't stick together. In flat pan at least 2” high layer (I use bread loaf pans), as evenly as possible, hamburger sauce mixture, noodles, mozzarella cheese, then dot evenly with cottage or ricota cheese. Do the next layer. I usually have three layers of noodles.

Tip: Top layer should be the cheese, pour a little of the tomato sauce without hamburger or even some (heaven forbid) unflavored tomato sauce over the top to cover the noodles to keep it moist while baking.

Bake at 350 for one hour or until it begins bubbling and cheese browns a little. Recently someone serve me lasagna with more flavored sauce and mozzarella cheese melted over the top of a square… I especially liked it.

Serve garlic toast, and salad.

Tuna Noodle Casserole

Tuna Noodle Casserole
15 minutes or less on stove top

2 c Flat egg noodles

1 can Solid albacore tuna
1 can Mushroom soup
1 c Peas frozen (my innovation for smooth taste)
1 t Lawory’s season salt M
Mayonnaise (I use a heaping table-spoon full)

In 2 quart pan heat with six cups of salted water to boiling. Cook noodles while mixing rest of ingredients. When draining noodles heat tuna mixture up in pan then add the noodles back into the pan and serve.

It is good with three bean salad.

Bar B-Q Spearibs

Grilled Bar-B-Q Ribs (or Chicken)
These are the best rib recipe I have found... and I have really looked!!!
Pre cook the meat the day before you want to grill
Place the meat in a large pot cover with water, par-boil the meat on the stove top for about 20 minutes.

3 c Catsup
1c White sugar
½ c Pork liquid (that you cooked the ribs in or salt pork fluid)
2 T Chili powder
1 med. Onion (minced or chopped fine)
6 cloves Garlic
½ c White wine (dry)
¼ lb Salt pork (diced or if desperate you can use bacon) (chop and cook for twenty minutes)

Mix together, bring to boil, lower heat and simmer for an hour (I usually don't have the patients to wait and hour) . Cover hot ribs with hot sauce I put them in plastic bags and refrigerate over night. Turning them a couple of times to make sure they are covered.

Grill at room temperature.

Salmon Patties

Salmon Patties
20 minutes on stove top

1 can Salomon (break up into small pieces)
15 Crackers (crushed with rolling pin)
2 Egg
½ t Paprika

Mix above and make into patties. Fry in oil (half butter if you like butter) until golden brown, turn over once.

Serve with three bean salad or hot German potato salad.

Chili

An hour on stove top

1 lb. Hamburger
6 oz. Tomato paste
6 oz. Water
12 oz. can Tomatoes (diced)
12 oz. can Kidney beans
2 cloves Garlic (chopped fine) or ½ t garlic salt
1 Med. Onions (chopped fine) or ½ t onion salt
(½ t Salt if not using onion and garlic salt)
2 T Chili powder

Fry hamburger, add spices, then the tomato and kidney beans. Turn down heat and simmer for an hour. Serve with corn bread... or avacado, cheese and fresh onions, and a salad.

Italian Spaghetti

About 20 to 30 minutes on stove top

¼ to ½ lb. Hamburger (depends how meaty you like your sauce )
6 oz. Tomato paste
1 c Water
2 cloves Garlic (chopped fine) or ½ t garlic salt
1 Med. Onions (chopped fine) or ½ t onion salt
(½ t Salt if not using onion and garlic salt)
½ t Oregano

Fry hamburger, add spices, stir and cook for a few minutes, add tomato paste and water stir. (If you like add a fresh tomatoes or a can of diced tomatoes. Turn down heat and let simmer for 10 to 20 minutes. (longer is better)

Cook spaghetti in salted water until slightly chewy (aldente).

Serve spaghetti on plate add sauce and parmagon cheese, toast, and salad.

Beef Stroganoff

Beef Stroganoff
About 20 minutes
Heat water in a 2 quart pot of 1 ½ quarts of salted water.
When boiling add two cups of flat egg noodles.

2 T Oil
1 lb. Beef (Sirloin or top round) Slice into strips, as thin as possible (Easier when half frozen)
1 med. Onion (cut into thin wedges)
1 to 2 c Fresh mushrooms (sliced thin)

1/2 c Sour cream

Fry onions, when clear, add beef, stir until brown, add mushrooms, stir, add…
2 Beef bullion cubes
1 1/2 c Water

Bring to boil, turn down heat to medium, cover and cook for five minutes, add…

2 T Corn starch (mix water and stir into above)
¼ c Water

Mix with corn starch and pour into sauce. Allow to boil until thickened. Add sour cream.

Serve over noodles with a salad.

Chicken Stew with Dumpling

Chicken Stew with Dumplings
About an hour
My mom used to make this...


4 Chicken breasts or whole chicken
Cover chicken with water
2 Chicken broth cubes
4 Potatoes Medium sized, peeled and quartered
1 Onion Peeled, leave whole
1 C Carrots, peeled or quartered

1 C Peas, frozen

2 T Corn Starch
¼ C Water

2 C Bisquick
2/3 C Milk

In large Dutch oven, simmer chicken in water, add cubes, and potatoes, whole onion, and carrots simmer for around 20 minutes. Tear chicken into large chunks, de-bone and throw away the bones and skin. Continue to simmer, until potatoes are soft when pierced with a fork.
Add frozen peas. Bring to a boil.

Add corn starch mixed in the water.

Dot the stew with table spoon fulls of Bisquick mix. Simmer uncovered for ten minutes, cover and continue cooking for ten minutes.

Home Made Pizza

Pizza - Anne Whitney's Recipe
Set oven at 400 Degrees
I make multiple ones, and freeze them. Bake frozen, until bubbling and the cheese browns.

Dough
4 C Flour
1 ½ C Warm water
1 pkg Yeast (softened in water)
1 t Salt

Mix together, knead for seven minutes, grease bowl, roll dough in grease, to cover with grease, place in bowl, cover with a towel, put in warm place (not on stove top) to rise 1 ½ hours.
Pat out on greased cookie sheet.

Sauce
1 can Tomato paste
1 can Water (use paste can)
½ t Garlic salt
½ t Onion salt
¾ t Oregano
¼ t Worcestershire sauce
¼ t Pepper
1 T Olive oil

Put ingredience in sauce pan, heat until boils, reduce heat and simmer for twenty minutes, remove and set aside until dough has risen. Pour over dough, top with toppings and then cheese.

1 lb. Mozzarella cheese (grated)
Whatever toppings you like. I like pepperoni, onions, fresh mushrooms, black or green olives, green pepper, and yes...anchovies. When I use sausage and hamburger I pre-cook it.

Bake at 400 for 20 minutes. Until bubbling and cheese browns. Enjoy!

Sauerkraut and Speatzels

Sauerkraut and Speatzels - Old family recipe
Half a day on stove top and oven

Take two jars, cans or bags of sauerkraut (I like Polish style)
Pour in large pot
Add two pound of pork... Good cutlets to pork stake. Stir
Cover meat with Sauerfraut and simmer for no less than four hours... all day if possible

Then put a 1 1/2 quart pot of water (6" deep) on the stove to boil.
Keep a tea kettle of almost boiling handy to add hot water to pot as needed.

Mix: (you can add or subtract for this size of this mixture)
3 cups Flour
3 eggs
1 1/2 teaspoons salt
3 cups or less water
Grate 1 to 2 pounds of cheddar cheese
(I need to make this to make sure the amounts are right)

Fry up one to two cups of chopped onions until soft

Mix together flour, eggs, salt and water, use less water - add the last cup
slowly until mixture is the texture somewhere between a soft bisquet mix and pancake batter. Spoon teaspoon sized globs into the boiling water. See what works best for dumpling... to thin and they fall apart too thick and they are doughy.

After being in the water a couple of minutes, run the spoon around the bottom of the pan to loosen dumplings. When they float to the top they are done.
Spoon into a greased high sided baking dish. Lay out dumplings evenly in one layer, sprinkle with grated cheese. Layer multiple layers of dumplings and cheese until pan is full.

Sprinkle with cooked onions and bake for one hour at 350 degrees. They will puff up a little.

Serve with sauerkraut and pork mixture. Enjoy!
